Four plates, always four

A Grand Slam is four foods that define a country to the outside world. They are the dishes that carry a nation’s identity across borders: not the most refined, not always the most popular at home, but the ones that say this is from here.

The concept was invented by Michael Pelose. The rule is four, always four: enough to force choices, few enough to make each one count.

Coming attractions: Grand Slams U.S.A.

Fifty states, two hundred plates, and a car down Route 66. Until the platform opens, its poster hangs on the hoarding, in a different decade every visit.
